Sun Bear Specialty Coffee Roasters has launched its first standalone cafe in St. Petersburg, offering unique brews and a vibrant retro atmosphere.

Sun Bear Specialty Coffee Roasters is basking in the success of its first independent cafe, which opened its doors in St. Petersburg, Florida, in late July. This new spot, boasting a generous 1,200-square-foot layout, combines a retro vibe with a commitment to high-quality coffee.
A Retro Coffee Experience
The cafe features a distinctive 1970s aesthetic, highlighted by a butter-yellow tiled bar and authentic vintage decor that includes red shelving and nostalgic hi-fi speakers, creating an inviting atmosphere for caffeine aficionados. Coffee shops have become social hubs in urban settings, where aesthetic choices play a major role in attracting customers. Sun Bear's decision to embrace a retro style might resonate particularly well with those looking for a unique place to unwind or connect with friends. This decor isn’t just eye-catching; it taps into a sense of nostalgia that many millennials and Gen Z customers find appealing as they seek authentic experiences in a saturated market.

The Vision Behind the Design
Kenny Beers, the owner of Sun Bear Coffee, shares that the vision behind the design was clear. “We were very disciplined with this one thing,” he says. “We already had a great space, but our Pinterest pinboard was loaded.”
This focus on a coherent design is essential as coffee drinkers are increasingly looking for more than just a caffeine fix. They want a place that offers an experience—something that Beers clearly understands. The meticulous planning involved in curating an aesthetic that's cohesive yet evocative mirrors broader trends in the coffee industry, where the atmosphere can be as important as the quality of the brew. If you're working in this space, you recognize that ambiance has become a competitive edge.
Behind the Roasting: An Artisan Craft
Adjacent to the main cafe, an 800-square-foot space serves as the roasting area, where Sun Bear utilizes a Yoshan machine for its freshly roasted beans. “It’s still small, but so much better than my garage,” Beers remarked.
Roasting coffee is both an art and a science, and the decision to incorporate a dedicated roasting space marks a significant investment in quality control. As consumer interest in specialty coffee grows, the transparency around sourcing and roasting has become more pivotal. Sun Bear's choice to showcase its roasting area invites customers into the process, demystifying the craft and potentially elevating their appreciation for the final product. This kind of openness can strengthen brand loyalty—customers often gravitate towards brands that are transparent about their production processes.
This standalone venture follows five years of establishing their brand through various channels, including markets and pop-ups. Throughout this period, Sun Bear perfected its craft, focusing on lightly roasted single-origin coffees, featuring innovative post-harvest processing methods.
A Unique Brewing Methodology
At the cafe, a cream-white 2-group Rancilio Classe 5 espresso machine crafts unique coffee beverages, often using an Ethiopian Guji coffee as the base. Customers can indulge in innovative drinks featuring house-made syrups or creative additions like dragon fruit cold foam. For those who prefer manual brewing, the shop showcases both co-fermented offerings and traditional washed-process coffees sourced from various importers and direct connections.
Such offerings reflect the growing trend of personalization in coffee shops. As consumers continue to explore their tastes, the ability to choose between various brewing techniques and ingredient combinations is appealing. This openness to experimentation allows Sun Bear to cater to diverse customer preferences, setting itself apart from competitors who may offer more standardized drink options (and this is the part most people overlook). It demonstrates a commitment not only to quality but also to creativity, a factor often neglected in the fast-paced coffee scene.
“I’m always chasing down the next producer,” Beers explains, highlighting cooperative relationships with suppliers such as Unblended, Cafe Imports, and Cofinet, alongside personal connections mainly fostered through WhatsApp.
A Journey Through Music to Coffee
Beers’ journey into the coffee industry has deep roots in his experience as a music teacher in Cambodia, where he embraced the vibrant late-’60s and early-’70s music scene. It was during this time that he met Kakada Nub, a noted roaster and barista, who imparted invaluable roasting knowledge before Beers returned to the U.S. due to the pandemic.
The connection between music and coffee goes deeper than you might expect. Both domains pride themselves on craftsmanship, community, and the sensory experience they provide. This unique background may influence Sun Bear's attention to detail in both product and ambiance. As Beers continues to blend these passions, he creates a narrative for Sun Bear Coffee that resonates with customers on multiple levels.
Adapting to Changes
After establishing Sun Bear in 2021, Beers launched a smaller coffee bar inside St. Petersburg’s Sans Market. Recently, he shifted focus entirely to the new cafe after closing the original bar in May, aiming for a streamlined approach where the emphasis is on coffee quality rather than food preparation. “We want it to be good, and we want to focus on the coffee instead,” he affirmed.
This shift underscores a critical trend in the coffee shop industry: simplification. With the pandemic having reshaped consumer behavior, businesses are exploring ways to remain relevant and thrive. Streamlining operations can mean greater focus on what really matters—quality over quantity. This highlights a willingness to adapt that may serve Sun Bear well in the long run.
Looking Ahead for Sun Bear
The grand opening on July 26 featured live music, connecting Beers' dual passions for coffee and music. “The grand opening was a big success,” he stated enthusiastically. “Next up for Sun Bear is that we have added more subscription services such as Crema.co and Bottomless, and we want to expand our roasting to an even broader reach across the U.S.”
This ambition reveals a broader vision that stretches beyond the local landscape. Strategic partnerships with subscription services can not only provide additional revenue streams but also introduce Sun Bear to potential customers across the country. Expanding the roasting operation also suggests confidence in their product quality, allowing them to cater to a growing national demand for specialty coffee.
